Low Carb Mini-Pigs in A Blanket

Overview:

With this recipe, the iconic “hot dogs in a blanket” get a much needed low carb makeover.

These popular appetizers certainly must rival deviled eggs for the fastest disappearing party food of all time. If it isn't broke why fix it… let's just make it better.

Now pigs-in-a-blanket are officially low carb, with the same delicious, timeless flavor of great little smokie' dogs wrapped in their tender little bread pillows.

You can also slice up your favorite franks in place of the cocktail weiners, if you want. To cheese or not to cheese is up to you.

Ingredients:

1 16 oz Package Mini cocktail franks or sausages
1 Cup Rising Crust Pizza Crust Mix OR All Purpose Low Carb Flour – Economy Size – 2 LB
2 Teaspoons Oil
1 1/2 Teaspoons Active dry yeast
1/4 Cup Warm water

Optional:
6 Slices American Cheese

Instructions:

Preheat oven to 170 °.

You will need a cookie sheet to bake these on.

In medium size bowl, place pizza mix and yeast. Stir to mix in well. Stir in water and oil.

Knead dough for a couple minutes and separate into two "balls".

Place one ball in center of cookie sheet and press or roll out to approx. 7" circle.

With large kitchen knife, cut dough straight across the middle and then vertically, dividing the dough into quarters.

Then cut each quarter section into 3 pieces making a total of 12 triangle pieces.

With knife, gently lift a piece out.

If you're using cheese, cut the cheese slices into 4 quartered pieces.

Place one piece of cheese and a cocktail frank across the widest side of the triangle and carefully roll up the tender dough.

Place on the cookie sheet 2" apart. Repeat with second ball of dough.

Turn oven off and place in oven for 15 minutes.

Turn oven to 375° and bake appetizers for 12-15 minutes.

Check midway through to be sure they aren't browning too much. If they are, just turn the oven down to 350°.

Cook's Tip: It's easy to make these ahead and freeze for party or game day. But be careful…they tend to disappear right after you bake them…especially if you're not alone. Enjoy!

Serve hot or cool and freeze in tightly wrapped freezer package for up to 3 months.

Makes 24 appetizers, less than 1/2 carb per piece.

Variations:

Like Corn dogs? Try using Carb Counters™ Low Carb Corn Muffin Mix in place of the pizza crust mix. Use 1-1/2 cups corn muffin mix and adjust the water a bit.

For jalapeño corn dog version, mix 1 tablespoon chopped, drained jalapeños into the dough.

For "swiss cheese dogs", use swiss cheese, or for cheddar dogs, use cheddar cheese.

Like "hot" dogs, use pepper jack cheese or jalapeño cheese in place of the American Cheese.
