Overview:

Ingredients:

1 cup 1 cup Carb Counters™ All Purpose Low Carb Flour - Economy Size
1/4 cup Olive oil or 1/3 cup softened butter
3 tablespoons Cold water

Instructions:

Preheat oven to 375°. Coat one side of a piece of plastic wrap at least 14" long with cooking spray.

In medium size bowl place flour and oil or butter. Using a whisk or pastry blender, cut in oil or butter until mixture resembles coarse crumbs (1-2 minutes). Sprinkle the water over the mixture. Using a fork, lightly mix the water into the crumbs. Form a dough ball and knead a couple of times until smooth.

Place dough ball on center of a cookie sheet and roll or form dough into an approximately 6" long "log".

Place plastic wrap over the dough ball - sprayed side down - and press (or roll) dough out evenly to form a square 12" x 12" shape.

Bake on center oven rack for 10-12 minutes or just until "lightly" browned. Cool for 5 minutes and cut into 36 - 2" squares. After crackers are cooled completely, store in zip lock bag. Crackers keep fresh for a month. May also be frozen for 2 months. Makes 4 - 2 net carb servings (9 crackers each).

Variations:

Italian Style Flatbread/Crackers: Top with Italian seasonings, sauce, garlic or herb mixture of your choice before baking.
Add cheese, red sauce and pepperoni or other meat or sausage toppings.
Add fresh chopped basil, goat cheese and spinach.
Top with sesame seeds, small sunflower seeds and/or flaxseeds - press into flatbread with rolling pin before baking.
Cinnamon-Sugar (not)™ Cracker Variation: For a sweet flavored cracker, mix in low carb sweetener equal to one Tablespoon of sugar to dry mix. After cooling, place in bag containing a mixture of 1/4 cup one -to- one sugar replacement - (like Sugar Not™Spoonful™Natural Sugar Replacement with Fiber) and 1 Tablespoon cinnamon. Shake bag until crackers are coated. Store in same bag, if desired, or sealed container.
