Overview:
Easy to make, this low-carb pizza is a winner. Try making smaller 6" pizzas for 2 or make the standard 12" and refrigerate or freeze the out-of -oven pizza before topping with the lettuce layer. Makes 2 -6" pizzas or 1 standard 12" pizza.
Ingredients:
1 1/2 cup Rising Crust Pizza Crust Mix OR All Purpose Low Carb Flour – Economy Size – 2 LB
1 Packet Active Dry Yeast
3 Teaspoons oil
3 Cups Shredded Mozzarella (or your favorite Italian cheese blend)
3 Cups Precooked bacon, crumbled ((regular or thick sliced))
1/2 Head Thinly-sliced iceberg lettuce
1/3 Cup Mayonnaise
1 Teaspoon Garlic Powder
Instructions:
Preheat oven to 170°. Turn oven off.
Prepare pizza according to label recipe using only 1-1/2 cups mix, 1 packet of yeast, 3 teaspoons oil, and 1/3 cup warm water.
After forming, sprinkle cheese and 2/3 of the bacon on top of pizza and let rise in oven and then bake at 400° for 10-12 minutes (until pizza has risen and bottom of crust is brown).
Combine the mayonnaise, garlic powder and 2 Tablespoons cold water. Stir and toss dressing with lettuce. Top pizza with lettuce and dressing. Sprinkle remaining bacon on top. Garnish with cherry tomatoes. Enjoy! Net 3 carbs per serving.
Variations:
Add 1/2 tsp fresh ground black pepper to pizza crust mix.
