Overview:

Its so easy to make a delicious homemade low carb pizza with Carb Counter's Bistro Bread! Choose your toppings to create your own custom pizza, too. Recipe makes three - 7" pizzas. Freeze the leftovers, if you have any.

Ingredients:

1 Carb Counter’s™ Low Carb Classic White Bistro Bread (or)
1 Carb Counter’s™ Low Carb Multi-Grain & Flax Bistro Bread
1/2 cup Onions (sliced thin)
1/2 cup Peppers (sliced thin)
1/2 cup Mushrooms (sliced thin)
2 cups Pizza Cheese
24 Slice(s) Pepperoni
Your favorite pizza sauce (or use recipe below)

Instructions:

Preheat oven to 400 degrees.

Place the pizza on a cookie sheet. Slice the Bistro Bread through into 3 approx 1" horizontal (round) slices. Turn the top and bottom slices with the crust over. The third piece will make its own crust during baking. With a knife, cut an even 1/4" around the inside of the bread slices (to make a rimmed crust) and spoon out bread crumbs to just a 1/4" depth. Save the crumbs!*

Sprinkle 1/2 of the cheese over the pizza rounds and press down slightly. Spread 1/3 of the sauce inside each slice of bread and top with veggies and cheese. Top with remaining cheese. Place pepperoni slices on top. Bake for 20 minutes, until golden brown and bubbly. Makes three 7" pizzas. Each pizza serves 4 snack size or 3 main dish size entrees. 6 net carbs per entree size.

Sauce recipe:

1 Tablespoon olive oil

16 oz. Hunts No Added Sugar Italian Style Sauce

2 teaspoons Italian seasonings

Variations:

For BLT: bake plain pizza rounds for 15 minutes, spread mayonnaise on rounds, top with thinly sliced iceberg lettuce, one chopped medium size tomato and crumbled crisp bacon.
For Reuben: Use ingredients in our deli-style Reuben sandwich, top deli-style rye Bistro Bread rounds with polish sausage, too, if desired.
For Spinach mushroom: use sliced mushrooms and drained 10 pkg of frozen chopped spinach. Top with pizza cheese and 1 teaspoon dried garlic.
*To make toasted bread crumbs, toss with olive oil or butter and fresh black pepper. Bake at 350 degrees for 10 minutes. To coat poultry or fish, dip first in egg and coat with bread crumbs and bake.
