Overview: Serves 4
Use Dixie Diner's Egg (Not!)™ to make these delicious onion rings - without the egg. They're easy, tasty, and you can even make them low-carb with Dixie's Breading and Batter Mix.
2 tablespoons Egg (Not!)™-Low Fat-Low Carb
4 tablespoons Water
2 cups Breading and Batter Mix - Low Carb (Or ground corn chips)
1 Large sweet onion, cut in 1/2
1/2 teaspoon seasoning salt or Cajun Seasoning*
Preheat oven to 400°
Blend Egg (Not!)™ and water in bowl, and stir with a fork for a minute until thickened. Place ground corn chips and seasoning, in separate bowl.
Coat a cookie sheet with non-stick cooking spray. Coat each onion ring with Egg (Not!)™, lift and coat with breading mix.
Lay the onion rings in a single layer on a cookie sheet and bake for 10-12 minutes. Turn and bake for additional 5 minutes until brown and crisp.
Yields 4 servings.
