Carb Counters Sugar Free Microwave Fridge Fudge

OVERVIEW:

A delicious, melt in your mouth sugar-free fudge that is all natural and very easy to make. It's a keeper and sure to be a hit with all your guests. Enjoy.

INGREDIENTS:

  • 9 tablespoons Sugar Not™Spoonful™Natural Sugar Replacement with Fiber
  • 1 teaspoon Vanilla
  • 2 tablespoons Water
  • 1/2 cup Butter (1 stick)
  • 2 tablespoons Cream
  • 2oz (2 squares) Unsweetened Baking Chocolate

INSTRUCTIONS:

Combine Sugar Not™ Spoonful™ and water in medium size microwave safe mixing bowl. Stir with toothpick or knife until mixed. Mixture will be very sticky. Heat in microwave on high for 1 or two minutes, just until mixture boils. Note: do not over heat or mixture may foam up and boil over the bowl. Chop the chocolate into a few hunks and stir it into the Sugar Not™ mixture. If needed, place back in microwave for 30 seconds to completely melt the chocolate. Stir mixture, cut the butter into several pieces and stir the butter in along with the vanilla and cream. Stir until completely smooth and will blended. Mixture will be thin. 

Place in freezer for 20-30 minutes until semi-solid (add nuts if desired) and spoon onto buttered plate. Place back in freezer for 1/2 hour or chill in fridge for 2 hours until fudge is firm enough to slice. Keep fudge stored in fridge or freezer.

Makes 3/4 lb. (12 servings) of "Fridge Fudge". Less than 1 carb per serving.

VARIATIONS:

  • For Peanut Butter Fudge, omit the cream and stir in 1/4 cup of peanut butter.
  • Add 2/3 cup of your favorite nuts like almonds, macadamia nuts, pecans, peanuts or walnuts. Freeze dried cranberries or blueberries also make a great addition, as well as unsweetened coconut.
  • Note: Fudge is high in healthy, prebiotic soluble fiber, so enjoy it with 8 oz. of your favorite beverage.
