A really great & super easy low carb version of a classic savory cheese round… perfect for snacks and appetizers . Its no wonder this nifty little appetizer cheese snack has been around a very long time,; hey, it stands on its own, no need to have a messy dip to jazz it up. Its delicious and super to serve on a tray just plain as a delicious, healthy and superior low carb alternative to the common boring “cheese” crackers. The flavors are deep and tangy. You can adjust the whole taste- give it an “attitude” - by simply adding the hot pepper (or not as you see fit.

For guests its perfect for making one batch showing its “spicy” side and another batch that’s sans the hot pepper. Then you can please all tastes. The ones you added the pepper to will be a bit redder in color after cooking so its easy to tell them apart. Great savory “conversational” appetizers.

The recipe is easy and simple to make. Hope you enjoy it . Keep it in mind for holiday or special occasion parties or tail gates. Preheat oven to 350°. Move rack to center oven position.

Mix butter in with flour until blended. Stir in cheese, red pepper & salt (if using) and then stir in cereal. With small cookie dough scoop or a rounded teaspoon full, , shape into 24, “small” 1 inch balls, (add up to a tablespoon of water, if needed to easily form balls) and place them at least 1 inch apart on an ungreased baking sheet.
Flatten each dough ball to approximately 2” wide. Bake, 14-16 minutes, until golden brown. Ovens may vary.

Baker’s Tip: Just try not to over bake and burn the cheese edges.
Makes 24 appetizer size cheese rounds, less than 1/2 carb per cheese round and just 38 calories.
Store in covered container or zip lock bag for up to a month.
