Low Carb Sloppy Joe “Cups”

Delicious Sloppy Joe cups make great portable, one handed sandwiches / appetizers. Try them for game days, too. The repeated question…”what to serve for…” is solved by this great porta-cup. Who doesn’t like Sloppy Joes! Now, there’s Low Carb Sloppy Joes that are just as tasty and even self contained.

Some might like them sweeter than others; that’s covered here too. Just adjust to custom fit. It makes its own “bun” so no need for messy or should I say “sloppy” Sloppy Joes. If you like regular Sloppy Joes, don’t hesitate to try this easy, portable recipe, as its delicious and kicks the SJ’s up to a level of easy serving and eating convenience. Note: the Dixie Mix is able to deliver 6 huge servings… you will only be using 2 servings of the dry mix for this – so note the amount removed from the mix and store the rest of the contents for later use, or…recipe may be tripled and the whole mix used, if desired. Freeze leftovers.

Preheat oven to 375°.

Cook’s Notes: This recipe makes 6 muffin cup size Sloppy Joes. Line muffin cups with paper or foil “cupcake” liners for easy serving and clean up. Recipe may be doubled or tripled. If using paper cup liners, the Sloppy Joe cups may be frozen and microwaved.

In small bowl, place Sloppy Joe Mix and ½ cup very hot or boiling water. Stir to mix well and let sit.
In small saucepan, add 1/3 cup water and butter. Heat on medium high just until butter melts and water is very hot (do not boil), water will start to “bubble” around the pan edges.
Turn heat to low, add flour all at once and whisk until flour mixture is smooth and pulls away from sides easily (about 1 minute). Most of the lumps will have dissolved. Remove from heat and let sit for a minute to cool slightly.

Add egg and whisk just until mixture is creamy and smooth. Spoon into 6 muffin cup tins/paper or foil liners, lightly sprayed with non stick cooking spray.
Top with a large spoon of Sloppy Joe mixture in the middle of the cups and press down slightly. You will use all of the mixture.

Bake for 25 minutes. Cool for a few minutes before serving.
Sloppy Joe Cups may be tightly wrapped in plastic wrap, placed in zip lock bag and frozen for up to 3 months. Reheat in microwave for a minute or two or in oven for 10 – 15 minutes at 350°.

Makes 6 Low Carb Sloppy Joe Cups at 3 net carbs per cup, less than 89 calories each.
Variations:

Add a few drops of hot sauce to filling for spicy flavor.

For sweeter flavor, add 1 low carb sweetener equal to sugar measurement.

Rehydrate filling with beef or chicken broth in place of water.

Top with grated cheese.
