Carb Counters™ “Sand Tarts” Cookie

Overview:

Enjoy using all-natural unblanched almond meal in these super easy and so delicious almost no carb cookies. Don't you just love those 3 ingredient recipes?

Ingredients:

1 cup Almond Meal
3 tablespoons Softened Butter
1/4 cup Sugar Not™Spoonful™Natural Sugar Replacement with Fiber

Instructions:

Preheat oven to 300 degrees.

In medium-sized bowl, place all 3 ingredients and stir with spoon until crumbly. Using your hands, form into crescent-shaped 2" long cookies, or roll into balls and press into round cookie shapes 2" apart on un-greased cookie sheet. Bake for 15-20 minutes, until tops are lightly browned. Makes 16 sand tart cookies. Less than 1 net carb each. Cool and store in covered container to keep crisp.

Variations:

Add 1/2 teaspoon almond extract, orange extract or 1/2 teaspoon coconut flavoring.
A note on Natural Almond Meal:
Makes a great crumb-type pie crust.
Try dipping raw onion rings in egg and coating them with it - just bake at 400 degrees for 15 minutes for super good oven baked low carb onion rings.
