Low Carb Irish Shepherd’s Pie

A delicious everyday favorite. Easy low carb comfort food dinner everyone is sure to enjoy.

In short, its not just for the Irish! Make it and you’ll see just how easy and tasty it is to have “the luck of the Irish” meal that ticks all the boxes at your house. Freeze the leftovers, if you have any, and enjoy it another night or double the recipe and freeze even more.

It can be made completely vegetarian or vegan , if desired – see variation. What’s not to love?! Enjoy.

Ingredients

  • 1 inner pack of Classic Flavor Carb Counters™ Mashers (or any other flavor)
  • 1 lb ground beef
  • 1 cup beef broth
  • 2 cups (½ a 12 oz. frozen package of 3 pepper/onion blend)
  • 1/4 cup peas
  • 1 teaspoon granulated garlic (or 2 cloves minced fresh)
  • (optional)Sliced green onion or parsley for garnish/ or grated cheese

Directions

Preheat oven to 350°. Have ready an 8” x 8” baking pan or 9” x 5” standard loaf pan.

Prepare the inner pack of Classic Flavor Carb Counters° Mashers according to package directions and set aside.
In a medium skillet, over medium high, add the garlic and brown the ground beef for a couple minutes , stirring ; drain the fat off . Add the vegetables and cook for 3 minutes more. Stir in the beef broth.
In a 8” baking pan, or 9” x 5 loaf pan (as shown), spoon in the combined the browned ground beef/vegetable mixture and top with the Carb Counters”™ Mashers, spreading to the edge of the pan to completely cover the beef mixture.
Add green onion or parsley for garnish if using, or sprinkle grated cheese over the
Mashers.
Bake for 25 minutes or until bubbly and mashed potato top is lightly browned.

Cool for 5 minutes and cut into 4 dinner size servings: 7 net carbs per serving.
Vegetarian Option:

Use Beef Not™, ground style in place of beef and use broth from the Beef Not™ Broth #Mix.
