Low Carb German Chocolate Cookies

Quick and easy, this recipe gives you the flavor of German chocolate cake in a delicious “cookie”. Just mix the ingredients and drop the cookies on a cookie sheet and bake for 10 minutes!

Makes the perfect anytime snack , tea time or dessert cookie.

Ingredients

  • 2 tablespoons cocoa powder
  • 1/4 cup chopped pecans
  • 1/4 cup unsweetened coconut shredded flakes
  • 1/4 cup low carb chocolate chips (or chopped Carb Counters Chunkies™)
  • 1 cup Carb Counters™ All Purpose Flour
  • 4 tablespoons butter (melted)
  • 1 large egg
  • 1 teaspoon vanilla
  • 1 teaspoon baking powder

Directions

Preheat Oven to 350°.

In a medium size mixing bowl add all dry ingredients and whisk until well blended. Add egg, vanilla and butter and stir. Stir in chocolate chips or Chunkies™, shredded coconut flakes and pecans.
Drop by 20 rounded tablespoon full or medium size (1-1/2 tablespoon size) cookie dropper 2” apart on cookie sheet covered with parchment or coated with non stick
cooking spray.
Bake for 8-10 minutes, until cookies are risen, spread out to approx. 2-1/2 to 3” width.

Baker’s Tip: Cookies will still be soft in the center. For crispier cookies, turn oven down to 325° and bake for 12-15 minutes total.
Makes 20 – 3” low carb German chocolate cookies. Store at room temperature for 3 days, freezes well for up to 2 months.

1 net carb per cookie, just 65 calories.
Variations:

Toast coconut shreds for 5 minutes in 325° oven.

For chocolate, chocolate chip pecan cookies, delete coconut flakes.

For coconut chocolate chip pecan cookies, omit the cocoa powder.

Replace pecan pieces with walnut or almond pieces, or a mixture of all three if desired.

For cookie style low carb pie crust:
Mix ingredients and press into bottom and sides of 9” or 10” pie pan. Bake at 350° for 7-9 minutes.
