Delicious low-carb curried mock potato patties made with Dixie's Instant Mashers™ make a great dinner or side dish. If you're not worried about fat content, use a deep fryer instead, for more crunch.

Ingredients

  • 1 Inner pack(s) - Instant Mashers™-Low Carb-Classic
  • 3 Large Eggs
  • 1 Large Bell Pepper (any color) (Coarsely chopped)
  • 1 Medium Onion (Diced)
  • 1 Teaspoon Red curry powder
  • 1/2 Teaspoon Garlic powder
  • 1/2 Cup Monterey Jack Cheese (Grated or cubed)
  • 1 Cup Cooked Chicken (Diced (Optional))

Directions

Preheat oven to 350 degrees.
Drop by spoonfuls on greased cookie sheet to form patties approximately 1/2 inch apart. Bake at 350 degrees for around 30 minutes until golden brown around the edges and firm to the touch. The length of time will depend on the size of the patties: Small spoonfuls may need only 10 minutes - large burger-sized patties will take closer to 40 minutes.
