Easy Low Carb Pizza Crust For 2

This delicious low-carb pizza crust is perfect for any of your favorite toppings. Now, you can enjoy homemade pizza - even on a lower-carb diet.

Preheat oven to 170°. Move oven rack to center position.

In medium size bowl, combine yeast, flour and salt. Stir to blend well. Add water and oil. Mix well.

Knead for 2 or 3 minutes. Form dough ball and press out evenly to form an 8" round on pizza pan or cookie sheet. Crimp edges if desired.

Top with sauce, cheese and other desired toppings like pepperoni, mushrooms, onions, peppers, etc..

Turn oven off and place pizza in oven for 15 minutes to rise.

Turn oven to 425° and bake pizza for 10-12 minutes only -until light golden brown.

Note: For extra crispy crust, knead dough for a total of 5 minutes and place cheese on pizza first, followed by sauce and other toppings.

Variation: Add 1/4 teaspoon of freshly ground black pepper to dry ingredients before mixing.
Add 2 cloves of fresh chopped garlic to toppings.

For Spinach/Goat cheese Pizza:
Top with pizza sauce, chopped baby spinach leaves and 3 ounces of crumbled goat cheese. Sprinkle mozzarella over top.

Add 2 oz. chopped prosciutto (optional)

Shake several drops of Louisiana Hot Sauce over pizza for extra spiciness.
