Easy Low Carb Crunchy Peanut Butter Bars….they’re also low calorie

If you like peanut butter, these bars are great. Sometimes, you might just want a nice “crunch” along with your peanut butter. If so, then this satisfies both the craving for both crunchy and peanut butter in an easy low carb recipe.

All that’s needed is to mix the ingredients, dump in a pan and bake. At just 1- ½ carb per bar and only 55 calories, what’s not to love! So simple and quick to make, even a kid can do it. Sometimes the simple recipes are also the best. This recipe makes an 8” pan of bars, but can be doubled if desired. Freeze them and you’ll have them handy for snacking. Enjoy!

Preheat oven to 325°.

Place a piece of parchment paper in the bottom of the pan (line the bottom) or coat the pan with non stick cooking spray.

Mix peanut butter, flour, Spoonful™ and egg whites together until smooth. Stir in peanuts.
Bake for 20-22 minutes until golden brown. Remove and cool for 15 minutes. Cut into 12 bars. Bars keep well for several days, or may be frozen for up to 3 months.
Variation:

Use 1/3 cup chunky peanut butter and 2 tablespoons peanut halves or pieces.

Add ¼ cup carb controlled chocolate chips or morsels.

For a chocolate frosted version, melt 2 tablespoons Carb Counters; Chunkies™ Chocolate Chunks with ½ tablespoon butter, and spread over top of the baked, cooled bars. Place in refrigerator to harden up.
