Easy 1 Step Low Carb Pecan Pie Makes its own Crust
Talk about being “easier than pie”…now you don’t have to make a crust for a delicious low carb pecan pie. Just use one bowl and a spoon to create a great all natural “southern pecan pie” that’s full of scrumptious gooey pecan flavor.

- 2 tablespoons butter, melted
- 1 cup Sugar Not™ Spoonful™ Natural Sugar Replacement with Fiber
- 1/4 cup Carb Counters™ All Purpose Low Carb Flour - Economy Size
- 2 large or extra large eggs
- 1 teaspoon vanilla extract
- 1/8 teaspoon baking soda
- 1 cup chopped pecans
Preheat oven to 325°.
Pour butter into a 9” pie pan. Swirl pan to coat bottom completely with butter.
In medium size bowl, combine Spoonful™, flour and baking soda. Stir with spoon to mix well. Add eggs and vanilla extract. Stir with spoon until well blended. Add ¾ cup of pecans (reserve ¼ cup) to mixture and stir with spoon. Spoon over melted butter in pie pan and sprinkle remaining ¼ cup pecans on top of pie.
Bake for 25-30 minutes, until golden brown.
Baker’s Tip: Check after 20 minutes… If edges of pie are becoming too dark, place a piece of foil lightly over top.
Cool for 15 minutes before cutting. Serve warm or at room temperature. After 2 days, refrigerate leftovers. Pie may be tightly wrapped and frozen for up to 3 months.
To make cranberry / pecan pie, stir in ¼ cup of fresh or frozen cranberries.
To make orange/ pecan pie, stir in 2 teaspoons orange extract in place of vanilla.
To make maple/ pecan pie, use ½ teaspoon maple flavoring in place of vanilla.
To make coconut pecan, stir in 1/3 cup of unsweetened coconut flakes.
To make chocolate pecan pie, coarsely chop ½ cup of Carb Counters™ Low Carb Semi Sweet Chocolate Chunkies and stir into mix before spooning into pie pan.
