5 Minute Fluffy Low Carb Fruit Salad

low carb fruit salad This easy low carb fruit salad is so quick and showy to make… insanely easy, without any fuss. It’s a favorite to make for warm weather salads, easy desserts, or when you have guests show up unexpectedly. Looks like you slaved for a couple hours, but, hey, it's your secret.

You can vary this fruit salad recipe with berries of your choice - we used strawberries, raspberries and blueberries – and you can even add a bit of fresh pineapple, orange or banana, but just beware of adding too many carbs. We’re giving you the basic recipe here…see recipe variations and feel free to play with it as you choose. The nuts and coconut are optional. This low carb fruit salad keeps in the fridge well for a few days, covered lightly with plastic wrap.

I’ve found that keeping orange, lemon and pineapple extracts - all natural flavorings – have helped avoid adding high carb fruits to this wonderful salad, so you might want to pick some up the next time you’re in the bakery aisle of your supermarket. Enjoy!

Ingredients

Optional

  • 2 tablespoons chopped walnuts or pecans and/or
  • unsweetened coconut flakes

Directions

Whip the whipping cream in a medium/large bowl for a couple minutes until soft peaks begin to form. On low, sprinkle in the Carb Counters™ Gluten Free Whip It Up™ Instant Dessert Maker and sweetener, (if using) and beat lightly until blended.

Fold in the berries, nuts and coconut flakes (if using). Divide into individual serving containers and chill. To “speed chill,” just place in freezer for a few minutes.

Makes 4 – ½ cup servings. 3 net carbs per serving.
Variations:

*Add 1 teaspoon lemon or orange extract to whipping cream.

*Add a small amount of chopped fresh pineapple, peaches or apple.

*Use sliced almonds in place of walnuts or pecans.
